Learn and deepen your appreciation for creative cooking all'italiana during a unique and personalized Italian experience in New York. Under the culinary direction of Julian Epstein, you will experience authentic Roman and Italian cuisine, as if you had traveled across the planet.
Whether you choose the full experience -- from shopping to presentation -- or to start off in your kitchen, you will immerse yourself in the art of cooking and eating well. You will be able to enjoy unforgettable gourmet meals, scattered in with some Italian expressions and cultural anecdotes.

The first culinary day you can experience the shopping component, where we'll explore local markets and visit a variety of different stores, just as one would do in Italy. Some of the stops may include an artisan butchery, fish market, cheese store, bakery, a homemade pasta shop and farmers market. We will then head to your home or a select kitchen if you are visiting New York, where we will prepare the various dishes and sit down to eat together. This interactive cooking class is perfect for people who enjoy Italian cuisine, and want to learn more, as well as for those who are experienced in the kitchen. The program is tailor-made to suit your individual tastes, including Italian favorites you would like to add to your repertoire, or delicious menus you will learn to whip together easily.

Depending upon the season, specialties from a broad range of Italian regions may include a large array of antipasti, such as bruschetta, mozzarella and prosciutto, eggplant caponata, pate' of porcini mushrooms drizzled with truffle oil, olive pate' with sweet tomatoes and basil, and mint-scented artichokes. For the first course you may choose from Roman pasta specialties such as bucatini all'amatriciana, spaghetti alla carbonara, tonnarelli cacio e pepe, or dishes from other areas of Italy such as tagliatelle alla Bolognese, risotto alla Milanese, orecchiette with broccoli and spicy sausage, trofie with pesto, or pappardelle with shrimp and radicchio.

Some ideas for the second course are: "saltimbocca" veal wrapped in prosciutto with fresh sage, "pollo alla Romana" chicken with red and yellow peppers and tomato sauce, or beef "straccetti" with arugula. A seasonal vegetable could accompany the meat dish, or a salad, such as fennel with oranges and grapefruit topped with roasted pine nuts, or arugula, mushrooms and shaved Parmesan. For dessert a few favorites could include fruit compote with whipped ricotta and fresh berries, baked fresh figs with almonds and honey, or homemade tiramisù.

Julian Epstein, creative director of the As the Romans Do Culinary Adventures in New York, moved to Rome, Italy with his family at the age of six. In addition to being fluent in Italian, he is passionate about good food, and especially Italian cuisine. He began working with chefs in Italy as an adolescent while assisting the As the Romans Do Culinary Adventures in Rome. Julian was featured with his family, in connection with the book, As the Romans Do: An American Family's Italian Odyssey, on the Oprah Winfrey Show, filmed as he was cooking in his family's kitchen at the age of eleven. Julian recently graduated from Pace University in New York with a degree in International Management.
